Some of the simplest foods are sometimes the healthiest. Cinnamon is a popular kitchen spice used to flavor oatmeal, desserts, coffee and hot chocolate. It also promotes insulin metabolism and improves blood sugar control. Its active ingredient is cinnamic acid, which is also found in fruits, vegetables and flowers. Scientists from the U.S. Department of Agriculture, in a study on rats, found that cinnamon stimulated genes that controlled blood sugarregulation and inflammation. Cinnamon contains antioxidants called phenols that decrease inflammation and promote blood vessel health. Even small doses of cinnamon were helpful. People who ate one gram of cinnamon per day— about a half teaspoon— for 40 days showed reduced blood sugar, triglycerides (blood fats), LDL cholesterol (the bad cholesterol) and total cholesterol. Including cinnamon in the diet might reduce the risk of heart disease and diabetes. Bodybuilders would benefit by sprinkling a teaspoon of cinnamon on their oatmeal at breakfast. HIGH CALCIUM INTAKE PROMOTES FAT USE

Several controversial studies have found that increased calcium intake is related to lower body fat levels. Not surprisingly, the dairy industry has jumped on these findings to increase their sales. Several literature reviews concluded that calcium supplements do not help people lose weight, but increasing dietary calcium intake might help. CONSUME EGGS IN MODERATION

The egg has been a pariah food since the 1970s when scientists found a link between cholesterol intake and elevated blood cholesterol. More recent studies have found that moderate egg consumption is an acceptable part of a healthy diet. The key word is moderate. University of Montreal scientists led by David Spence found that people who ate three or more eggs a week had more plaque in their carotid arteries (supplies blood to the brain) than people eating two eggs or fewer per week. Most athletes know that good nutrition is critical for optimal performance. Unfortunately, they have trouble defining healthy diets. BEST FUEL USE: GLUCOSE OR GALACTOSE

Glucose is the most important fuel at exercise intensities above 65 percent of maximum effort. NUTRITIONISTS REASSESS NITRATES

Nitrates found in bacon, hot dogs and cold cuts are linked to stomach and pancreatic cancer. Nitrates, when consumed from vegetable sources, improve exercise performance by increasingnitric oxide (NO) levels in blood. NO is a gas released by the inner lining of blood vessels (endothelial cells) that helps regulate blood flow, blood pressure, muscle contraction strength and mitochondria) production (mitochondria are the powerhouses of the cell). Several studies found that consuming nitrate-richbeetroot extract before exercise improved endurance performance. A review of literature by University of Texas researchers led by Nathan Bryan concluded that nitrate intake was not linked to stomach cancer and that the value of this nutrient should be reassessed.
